This is a lovely vegan entree that can be either sweet or spicy or both. I like to add a splash of maple syrup and some currants to jazz it up a bit. I serve it over brown rice.

Recipe Ingredients for chickpea and zucchini curry

1 cup chick peas
2 tbsp. Olive oil
1 large onion
1 1/2 tsp. turmeric
1/4 tsp. cayenne pepper
1 tsp. mustard seeds
1 1/2 tsp. ground coriander
3/4 tsp. cinnamon
1 clove of garlic
1 large tomato
1 tbsp tamari
6 oz. tomato paste
2 medium zucchini

Recipe Directions for chickpea and zucchini curry

Heat the onions in the olive oil and soften. Add all of the spices, then the zucchini, tamari and tomato paste. Add the chickpeas last and simmer for 20 minutes or more.
