Chickpea vegetable soup with Parmesan and Rosemary

Recipe Ingredients for Chickpea vegetable soup

0.5 medium raw Onion Yellow
6 serving Beans Garbanzo
3 cloves, raw Garlic
2.5 oz Olive Oil, Extra Virgin
1.5 tbsp Salt, Table
8 oz Tomatoes Diced No Salt Added
2 medium Carrots
1 cup, diced Celery
0.5 cup Parmesan, Grated Cheese
5 cup (8 fl oz) Water

Recipe Directions for Chickpea vegetable soup

  1. Insert 1 whole clove into the onion. Put onion with clove into large pot with 1# dried chickpeas, 1 sprig Rosemary, garlic, 2 fresh bay leaves, olive oil, salt and cheese rind.add 5 cups water and bring to a boil over high heat. Reduce heat to low, cover and simmer for about an hour, or until chickpeas are tender.

  2. Add the to a toes,carrots and celery, cover loosely,and simmer until vegetables are soft, about 25 minutes. While soup simmers, mix the chopped rosemary, grated Parmesan, lemon zest and pepper in a small bowl.

  3. Season the soup to taste and ladle into bowls. Sprinkle with the Parmesan mixture.
