Recipe Ingredients for chickpea and veg curry

1 teaspoon olive oil
2 cloves garlic
2/3 cup Celery
2 carrots
1 onion small
2/3 cup Mushrooms
400 g pumpkin
280 g broccoli
1 bunch spinach
350 g chickpeas
2 ounce Curry Paste
450 g Fat Free Yogurt Plain

Recipe Directions for chickpea and veg curry

  1. Chop all vegetables as desired. I like to dice everything.

  2. Boil pumpkin until tender, then broccoli in same water. Set aside. (Tip - save water to use as stock!)

  3. Heat oil in pan, add garlic until fragrant. Add onions, then celery and carrot, then mushrooms. Cook until tender.

  4. Add curry paste and cook for about one minute.

  5. Add yogurt and combine well.

  6. Stir in chikpeas and spinach until spinach is wilted.

  7. Add pumpkin and brocoli.

  8. Serve over brown rice or use as a filler in wraps and pastries.
