A delicious vegetarian indian inspired curry. Taken from "Vegetarian collectors edition 2007"

Recipe Ingredients for Chickpea and tomato curry

400 g canned tomatoes
1 tbsp cumin seed
4 tbsp coriander seed
1/2 cup fresh coriander
1 tsp olive oil
150 g mushrooms
200 g chickpeas
1 clove garlic
2 tsp ginger
1 tbsp curry paste
1 onion
0.12 tsp salt

Recipe Directions for Chickpea and tomato curry

  1. Heat the oil in a large pan. Add the chopped onion, ginger and garlic and fry until brown.

  2. Add the drained chickpeas and canned tomatoes and simmer for 5 minutes.

  3. Add the cumin, coriander and chopped mushrooms. Cook for a further 3 minutes until mushrooms reduce slightly.

  4. Season with freshly ground black pepper and salt to taste.

  5. Serve with rice and vegetables.
