From Vegetarian Times, it's a gloriously easy recipe that's very comforting during the cold months. A few tips: the cayenne can certainly be kicked up if you like more heat. It's good over brown rice, quinoa, millet, or whatever you like. The yogurt is key, as is the parsley. I tend to sub agave nectar for the honey or leave it out entirely, and it tastes just fine. Finally, raisins can totally be subbed for the currants. Oops, nope, *this* is the last thing: 2 (14.5 oz.) cans of chickpeas, rinsed and drained, can certainly be subbed for the dried. I like to soak and boil my own when I can, but life happens and the cans totally work in a pinch.

Recipe Ingredients for Chickpea Tagine with Cinnamon, Cumin, & Carrots

2 T. olive oil
1 small onion, thinly sliced
3 cloves garlic, minced
1 1/3 c. chickpeas, dry
3 medium carrots, peeled and sliced into thin rounds
1/4 c. dried currants
1 t. turmeric
1 t. cinnamon
1 t. cumin
1/4 t. cayenne pepper
2 t. honey
4 oz. FAGE Total 0%
3 T. parsley, finely chopped

Recipe Directions for Chickpea Tagine with Cinnamon, Cumin, & Carrots

  1. Heat oil in large skillet over medium heat. Add onion and garlic and sauté 2-3 minutes or until onion slices are soft.

  2. Stir in chickpeas, carrots, currants, spices, honey, and 2 c. water. (I often use low sodium vegetable broth.)

  3. Cover and simmer 20-25 minutes, stirring occasionally. Season with salt and pepper.

  4. Divide tagine among four bowls. Garnish each serving with a dollop of yogurt and sprinkle with parsley. (You don't have to use Fage brand Greek yogurt; the nutritional info should be the same across the board.)

  5. Enjoy!
