Recipe Ingredients for Chickpea & Sweet Potatoe Curry Recipe

400 g Chickpea
1 tablespoon Olive Oil
1 Onion (Peeled and sliced)
1 large Sweet Potato (peeled and cut into bite size pieces)
2 cloves Garlic (peeled and chopped)
1 tablespoon Tomato Paste
1 teaspoon Curry Powder (to taste)
1 cup water
2 Vegetable stock cubes

Recipe Directions for Chickpea & Sweet Potatoe Curry Recipe

  1. Combine oil and onion in a pan, cook on moderate heat about 5 minutes or until onion is soft, stirring frequently. Add garlic, stir a further 1 minute. Add curry powder, chilli and tomato paste, cook further 2 minutes.

  2. Add sweet potato, chickpeas, water and stock cubes, cook over low heat for 1 hour, stirring occasionally, adding a little extra water if mixture becomes dry.

  3. Serve on cooked rice.
