Chickpea and Sweet Potato Koftas Recipe

Little patties or balls made from ground or mashed vegetables. Similar to falafel, except not deep-fried.

Recipe Ingredients for Chickpea and Sweet Potato Koftas

12 oz Yam
15 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 clove Garlic
2 medium (4-1/8" long) Onions, Spring Or Scallions
2 tsp cumin
1 tsp minced ginger
1 tsp salt
2 tbs lemon juice
6 tbs flour
1 cup peas
2 tbs olive oil

Recipe Directions for Chickpea and Sweet Potato Koftas

  1. Cook sweet potato in microwave until soft, then peel. You should have 1 1/2 C cooked sweet potato. Transfer to food processor.

  2. Add all the other ingredients, except the flour, peas, and oil. Puree until fairly smooth.(The mixture might be very thick, depending on the sweet potato or yam, so be patient.) Transfer to a bowl.

  3. Stir in the flour until it is thoroughly incorporated, then gently stir in the peas. Form into 8 patties.

  4. Plae a skillet over medium heat and add a little bit of oil. When the oil is very hot, add the patties, and saute for about 8 to 10 minutes on each side, or until lightly browned and heated through.
