Recipe Ingredients for Chickpea and Sweet Potato curry

300 g sweet potatoes , peeled and roughly cubed
1 onion
1 tbsp curry paste
400 g canned tomatoes
230 g canned chickpeas , drained
100 g spinach, raw

Recipe Directions for Chickpea and Sweet Potato curry

  1. Cook the sweet potatoes in a pan of boiling water for 10-12 minutes until tender. Meanwhile, fry the onion and curry paste in another pan until soft, add the tomatoes, chickpeas and simmer gently for about 5 minutes.

  2. Drain the sweet potatoes and add to the tomato mixture. Stir in the spinach and cook for a minute until just starting to wilt. Stir in some fresh coriander if you like, season to taste and serve.
