Chickpea Stew Recipe

Creamy and satisfying vegan Italian-style chickpea soup.

Recipe Ingredients for Chickpea Stew

2 cups chickpeas
1 red onion
1 stalk celery
2 cloves garlic
2 tablespoons rosemary
2 tablespoons olive oil
18 ounces vegetable stock
3 1/2 ounces pasta

Recipe Directions for Chickpea Stew

  1. Cook your chickpeas according to package directions or, if starting with canned chickpeas, use 2 cans. Drain and rinse well, set aside.

  2. In a medium-sized pot, cook finely diced onion, celery, garlic and rosemary in the oil on medium heat until soft; onion and celery will translucent about 15 minutes.

  3. Add the chickpeas and stock, cooking for an additional 20-30 minutes.

  4. In the mean time, cook up the pasta, (which should be a small soup pasta, such as ditalini) according to package directions for al dente pasta. Drain and set aside.

  5. When chickpeas are done simmering, remove half with a slotted spoon. Blend the other half with a hand held immersion blender (doing this in your regular blender can result in burns and other bad things). Return the set-aside chickpeas to the mixture, add the pasta. Simmer for another 10 to 15 minutes stirring every few minutes. It's ready when it's thick!

  6. Serve drizzled with good quality olive oil (really, don't skip this part!).
