This is a recipe from Fran's house of Ayurveda on blogspot. It has been adapted for Vata.

Recipe Ingredients for Chickpea Stew

6 cups water or veg stock
11 oz onion, small, chopped
2 g garlic cloves, minced
2 tbsp clarified butter
1 tsp turmeric
1 tsp sweet paprika
28 oz red potatoes, cut into 1/2" cubes
28 oz sweet potatoes, cut into 1/2" cubes
1 tbsp rosemary, fresh (1 sprig)
1 tbsp sage, fresh, minced (5 leaves)
1/2 cup sweet potatoes, pureed
3 cups chickpeas, cooked and drained
2 cups (150 g) carrots or Jerusalem artichoke, chopped

Recipe Directions for Chickpea Stew

  1. In a soup pot, bring the water or stock to a simmer.

  2. While the water heats, saute the onions and garlic in the ghee (using a separate pot) for about 8 minutes, until soft. Stir the turmeric and paprika into the onions and saute for a minute.

  3. Add mixture and the potatoes, rosemary, sage to the simmering water or stock. Cook for about 12 minutes, until the potatoes are tender. Stir in the pureed squash or sweet potatoes, and add the drained chick peas and artichoke hearts. Remove the rosemary sprig, add salt and pepper to taste, and return to a simmer.

  4. Serve with lemon wedges , if you wish.
