Recipe Ingredients for Chickpea and Spinach Soup

1 tbsp oil, olive
4 clove garlic, minced
2 onions, chopped
1 potato, peeled and chopped
4 c chicken stock
2 tbsp parsley
2 tbsp coriander
1 tsp dried marjoram
19 oz chickpeas
5 oz spinach, fresh

Recipe Directions for Chickpea and Spinach Soup

  1. in large heavy saucepan, heat oil over medium-low heat.

  2. cook garlic and onions, stirring occasionally for 5 minutes until softened

  3. Add potato and cook, stirrin for 1 minute

  4. Add stock, parsley, coriander and marjoram

  5. Cover and simmer for 5 minutes.

  6. With hand blender, puree the soup in the sauce pan

  7. Add 1/2 cup water if too thick
