Recipe Ingredients for Chickpea and Spinach soup

400 g chickpeas, dry (soaked overnight)
8 cups chicken stock
1 yellow onion, diced
6 cloves garlic (diced very small)
2 tomatoes (diced- or 1 can diced, w/juice)
10 oz spinach, frozen
2 T fresh basil (chopped)

Recipe Directions for Chickpea and Spinach soup

  1. If using dry beans, soak overnight, drain, cook till tender, add 800g to soup pot

  2. Add all ingredients to pot, simmer about an hour, till flavors blended and tomatoes have "melted" into broth
