Recipe Ingredients for Chickpea & Spinach Soup with Garlic

2 tablespoons olive oil
4 cloves garlic
1 onion
2 teaspoons cumin
2 teaspoons coriander
1 1/4 quarts vegetable broth
2 1/2 cups chopped potatoes
15 ounces chickpeas
1 tablespoon cornstarch
2/3 cup cream
2 tablespoons tahini
3 1/2 cups spinach

Recipe Directions for Chickpea & Spinach Soup with Garlic

  1. heat oil and saute onion and garlic until onion is soft and browned.

  2. stir in cumin and coriander and cook for 1 minute. Add stock and diced potatoes and bring to boil. Simmer for 10 minutes.

  3. Add drained chickpeas and simmer for 5 minutes or until the potatoes are just tender.

  4. Blend together cornstarch, cream, tahini and any additional seasoning such as cayenne, or black pepper. Stir into the soup with the sliced spinach and bring to a boil.

  5. Lower heat and simmer for 2 minutes.

  6. Adjust seasoning to taste (salt and pepper).
