Recipe Ingredients for Chickpea and Spinach Pasta

14 oz chickpeas
1 cup tomatoes canned
16 oz pasta
6 oz spinach
1 small onion, chopped
1 tbsp olive oil
1/4 cup water

Recipe Directions for Chickpea and Spinach Pasta

  1. Heat the olive oil in a medium saucepan.

  2. Add the onion and saute until tender.

  3. Add the chickpeas, canned tomatoes and water.

  4. Heat until boiling.

  5. Remove from heat and cover.

  6. Cook the pasta in boiling water according to the package directions.

  7. Stir in the spinach and allow it to wilt.

  8. Spoon the pasta into a serving dish.

  9. Stir in the chickpea mixture.
