Chickpea and Spinach Curry Recipe

CC has screwy values for chickpeas. Reall use two cans and drain them adn rinse them and the calorie value should equal what is here.

Recipe Ingredients for chickpea and spinach curry

2 1/2 cups finely chopped onion
4 T chopped ginger
3 t olive oil
2 t sugar
4 t curry powder
12 oz chickpeas
28 oz canned diced tomatoes, undrained
8 cups fresh spinach
1 cup water
1/2 t salt

Recipe Directions for chickpea and spinach curry

  1. Heat oil in large skillet over medium high heat.

  2. Add onion, ginger, sugar and curry to pan and sauté 3 minutes.

  3. Add chickpeas and tomatoes with liquid and simmer 2 minutes

  4. Stir in spinach water and salt and cook one minute or until spinach wilts.

  5. Serve with whole wheat pita bread toasted with a bit of parmesan cheese sprinkled on top and melted if you want.
