Quick cooking North Africa spiced soup with chickpeas and vegetables. I added the chick meat but the original recipe doesn't have that.

Recipe Ingredients for chickpea Soup

5 cup Organic Free Range Chicken Broth
0.5 small Onions
2 serving Extra Virgin Olive Oil
1 large Carrots, Baby
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 serving Ground Cumin
0.25 tsp Turmeric, Ground
0.5 tsp Cayenne Pepper
1 tsp Salt, Table
3 cup Garbanzo Beans (Chick Peas), Organic
1 medium Squash, Summer, Zucchini, Includes Skin
1 thigh, bone removed Chicken, Thigh

Recipe Directions for chickpea Soup

  1. heat olive oil over medium and saute chopped onion and carrot for about 3 minutes.

  2. Add tomato, bell pepper, 1 tsp salt, 1/2 tsp each gr cumin and cayenne pepper and 1/4 tsp ground tumeric.

  3. Saute about 1 minute

  4. Add 5 cups chicken broth, 2 cans drained and rinsed chickpeas, and 1 medium or 2 small zucchini chopped.

  5. Add optional cooked chicken meat

  6. Bring to a boil and simmer about 15 minutes until zucchini is tender and flavors are blended.

  7. Season to taste with salt and pepper and serve. Drizzle servings bowls with olive oil.
