Chicken broth base, with lots of veggies

Recipe Ingredients for Chickpea Soup

900 ml low sodium chicken broth
1 cup dried chickpeas
6 cloves garlic
1/2 medium onion
1 large carrot
1 small tomato
3 stalks celery
1/2 cups frozen peas

Recipe Directions for Chickpea Soup

  1. Rinse chickpeas. Boil 1 cup chickpeas with 3 cloves minced garlic and a few slices of onion with 2 cups water for 2 minutes. Remove from heat and let sit for 2 hours (or soak overnight).

  2. Heat chicken broth and add all veggies (diced). Let simmer until everything is soft (approx. 45 minutes). Puree and adjust flavour with salt and pepper if desired.
