Standard Tried and True. You can easily add peas and carrots to this. But this is your standard prep.

Recipe Ingredients for Chickpea Soup

540 g chickpeas
4 cups water
75 g 2 cubes low sodium vegetable broth
1 large sweet potato
1 medium onion
4 cloves garlic
2 tsp cinnamon
2 tsp fennel seeds
1 tsp garlic powder
1 tsp pepper
1 tsp turmeric
1/2 tsp salt
1/2 tsp allspice
1/2 tsp cardamom
1 tbsp olive oil

Recipe Directions for Chickpea Soup

  1. Sautee onions and garlic in a large pot in olive oil until translucent.

  2. Add Broth, bring to a boil, add chopped potatoes, fennel seeds.

  3. Cover, reduce heat and simmer for about 20 mins. Add chickepeas and continue to simmer for 10 more mins.

  4. Add Spices and salt to taste (measurements are rough) and stir. Turn off heat and allow to cool before serving.
