Recipe Ingredients for Chickpea slow cooker Curry

1/2 cup chickpeas
0.33 cup light coconut milk
1 tbsp Olive Oil
1 cup carrots
1 1/2 cups cauliflower
1 cup tomato sauce
1 onion
1 tbsp ginger
2 cloves garlic

Recipe Directions for Chickpea slow cooker Curry

  1. sautee onions, garlic and ginger in olive oil with curry powder to taste

  2. Place in slow cooker with rest of ingredients and some water

  3. Cook on high 3-4 hours. Salt & pepper to taste. Add hot peppers if so inclined.

  4. Serve over whole grains with cooked greens for nutritious meal .
