A mediterranean twist on some plain ole chickpeas. Serve cold as a compliment to your favorite sandwich at lunch.

Recipe Ingredients for Chickpea Salad

16 oz chickpeas
3 oz chopped black olives
4 oz banana peppers, chopped
1/2 onion, sweet yellow
1 cucumber
1/2 bell pepper, sweet yellow
2 oz vinegar, red
2 oz olive oil
1 tsp salt
2 tsp pepper

Recipe Directions for Chickpea Salad

combine everything, stir, let sit overnight.
