Garbanzo beans and artichokes... yum!

Recipe Ingredients for Chickpea Salad

2 cans artichoke
1/2 cup garbanzo beans
1 large tomato
1/2 medium onion
1 tsp salt
2 tbsp dried basil
1/4 cup balsamic vinegar
1 tsp olive oil

Recipe Directions for Chickpea Salad

  1. Drain garbanzo beans, place in large mixing bowl.

  2. Add balsamic vinegar and olive oil. Mix gently.

  3. Dice tomatoes, artichoke hearts, and onion. Mix gently.

  4. Top with sea salt and dried basil.

  5. You can eat the dish right away or place it in the fridge (30 minutes) to allow the flavors to blend.
