Chickpea with beetroot, pumpkin, spinach and goats cheese

Recipe Ingredients for Chickpea Salad

400 g beetroot
1 tablespoon olive oil
2 cloves garlic
400 g pumpkin
400 g can chickpeas
2 tbs olive oil
1 tablespoon balsamic vinegar
150 g baby spinach leaves
110 g goat's cheese

Recipe Directions for Chickpea Salad

Cook pumpkin and beetroot until soft. Drain chickpeas and combine with oil and vinegar. Toss all ingredients together and topp with goats cheese
