Chilled chickpea salad with herbs. For a spicy version add sriracha sauce. Try swapping the lemon juice for lime juice and the parmesan for feta.

1 lemon yields Lemon Juice
0.33 cup Parmesan, Grated Cheese
15 oz Garbanzo Beans
1 tbsp Oil Olive Extra Virgin

Recipe Directions for ChickPea Salad w/Lemon, Herbs and Parmesan

Combine rinsed and drained peas, chopped basil, chopped parsley, fresh lemon juice, olive oil, and pressed garlic in a medium bowl. Add grated parmesan cheese and toss gently to blend all ingredients. Season salad with salt and pepper to taste. Serve chilled or at room temperature
