Recipe Ingredients for Chickpea & Red Onion Salad

1/4 cup red onion, slivered
19 ounce chickpeas, rinsed
1/2 cup chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon capers, rinsed and coarsely chopped
1 Salt, to taste
1 Pepper, to taste

Recipe Directions for Chickpea & Red Onion Salad

  1. Place onion in a medium bowl, cover with cold water and let soak for 10 minutes. Drain well and place in a salad bowl.

  2. Add chickpeas, parsley, lemon juice, oil and capers; stir to combine. Season with salt and pepper. Serve on lettuce leaves.
