Recipe Ingredients for chickpea ragout

2 tbsp Extra Virgin Olive Oil
1.5 cup Peas Chick
4 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 cup chopped Scallions
0.5 cup, chopped Onions
2 cloves, raw Garlic
0.5 cup Chicken Broth

Recipe Directions for chickpea ragout

Saute green and yellow onion in oil over high heat for 2-3 minutes, until softened. Add remaining ingredients, seasoning with salt and pepper. Bring to a boil, cover, and reduce heat to low, simmering gently for 15 minutes. Remove cover and simmer for a few minutes longer to reduce liquid. D
