Chickpeas, quinoa, spinach, yam and spices make this the perfect lunch. Spicy and sweet and full of texture.

Recipe Ingredients for Chickpea Quinoa Party in a Bowl

1/2 cup quinoa
1 1/2 cup chick peas
1 1/2 cup stewed tomatoes
2 cups baby spinach
1 tbsp olive oil
4 oz yam
1/4 c scallions

Recipe Directions for Chickpea Quinoa Party in a Bowl

  1. Prepare quinoa in a small saucepan. Set aside until end. Bake yam in microwave and chop.

  2. Heat olive oil in large skillet. Add rinsed chickpeas and sprinkle generously with salt, paprika, cumin, and red pepper flakes.

  3. Cook until crisp and golden, then adding entire can of tomatoes, cooked yams and scallions, and 1/4 cup of water. Simmer on low heat for five minutes then add spinach and cook until wilted.

  4. Stir in cooked quinoa and voila!
