Recipe Ingredients for Chickpea Potato Curry

2 1/2 cups vegetable broth
30 ounces garbanzo beans, rinsed
14 1/2 ounces stewed tomatoes
4 ounces diced green chilis
4 small potatoes
1 medium onion
1 tablespoon butter
2 teaspoons ginger
1 teaspoon cumin
1 teaspoon coriander

Recipe Directions for Chickpea Potato Curry

  1. Mix all ingredients in a saucepan or dutch oven. Simmer over medium heat for 30-35 minutes or until the potatoes are tender.

  2. Serve over jasmine rice.
