Recipe Ingredients for Chickpea Piccata

1 1/2 tbsp Extra Virgin Olive Oil
1 onion, chopped
18 grams Garlic
1/3 cup Bread Crumbs, Dry, Grated, Plain
2 cup Organic Vegetable Broth
1 Glass Wine
3 dash Pepper, Black
1 tsp, leaves Thyme, Dried
16 oz garbanzo beans
20 kalamata olives
3 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for Chickpea Piccata

  1. Heat oil over medium heat.

  2. Saute shallots and garlic until golden.

  3. Add bread crumbs and toast for about 2 minutes.

  4. Deglaze pan with wine.

  5. Add broth and spices. Bring mixture to rolling boil and reduce by half.

  6. Add chickpeas and capers and heat through.

  7. Add lemon juice, stir and serve.
