this really calls for 1 15.5 oz can chickpeas and also uses 8 c mixed greens

Recipe Ingredients for chickpea patties w/meditteranean salad

100 grams chickpeas
1/2 cup fresh parsley
1 clove garlic
2 tablespoons whole wheat flour
1 tablespoon olive oil
1/2 cup fat free plain yogurt
3 tablespoons fresh lemon juice
1 cup grape tomatoes

Recipe Directions for chickpea patties w/meditteranean salad

  1. in food processor, pulse chickpeas, parsley, garlic and salt and pepper iuntil just coarsely chopped and the mixture comes together when gently squeezed.

  2. form into 8 1/2 inch thick patties and coat with the flour

  3. heat the oil in nostick skillet over med-hi heat. cook patties, turning carefully until golden borwn, 2-3 min per side

  4. in small bowl, whisk yogurt, lemon juice and a little salt and pepper divide greens, tomatoes, onion and patties among 4 plates. drizzle w/yogurt dressing and serve w/pita chips if you want
