I went with a spicier version and paired it with some homemade pico de gallo. I didn't deep fry them, just used enough oil in the pan so they wouldn't stick and it worked out fine. The recipe yields about patties. I made half and saved the rest of the chickpea mixture in an air tight container in the fridge for the next day. Let the chickpea mixture sit at room temperature for about 15-20 minutes before making the patties. They don't hold together as well when cold. Pico De Gallo recipe 3 medium vine tomatoes, diced 2 Tbsp finely chopped onion Hand full of chopped cilantro A pinch of fine sea salt and black pepper Splash of lime juice Mix all ingredients in a small bowl. Refrigerate till ready to serve.

1 tbsp. of extra virgin olive oil
1 clove garlic, minced
1/4 cups of chopped onion
1/4 cups of chopped red bell pepper
1 celery stalk, chopped
4 cups of cooked chickpeas
1/4 cups of fresh chopped cilantro
1 tsp. of paprika
1/4 tsp. cayenne pepper
1/4 tsp. coriander
1/2 tsp. agave syrup
1 tbsp. baking powder
2 tbsp. of corn starch
1/4 tsp. of fine sea salt
1/2 tsp. of black pepper

Recipe Directions for Chickpea Patties with fresh Pico De Gallo

  1. Heat 1 Tbsp oil in a frying pan over medium heat.

  2. Saute onion, bell pepper, and celery for 5-7 minutes, until softened.

  3. Place onion mixture, chickpeas and cilantro in food processor. Pulse until mixture is well chopped but not pureed.

  4. Place chickpea mixture in a bowl and add remaining ingredients. Mix well.

  5. Heat 1 Tbsp olive oil in a frying pan over medium heat.

  6. Shape chickpea mixture into patties and cook in batches, about 4-5 minutes per side, or until crispy and browned. Add more oil to pan as needed.

  7. Serve with fresh pico de gallo. (Recipe above)
