Recipe Ingredients for Chickpea Noodle Soup

1 tablespoon olive oil
2 medium yellow onion, sliced thinly
2 cups sliced carrots
5 cloves garlic, minced
2 cups sliced mushrooms
1 teaspoon cumin seeds (or caraway/celery seed)
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed in your fingers
1 teaspoon ground black pepper
1/2 cup parsley, fresh chopped
2 tablespoons mirin (or Chinese cooking sherry)
1/3 cup miso (brown rice or any other)
4 cups chicken stock
2 cups beef stock
1 cup water (in case noodles soak up too much broth)
19 oz chickpeas, drained and rinsed
4 1/2 ounces soba noodles
4 cups escarole, chopped (can use any green)

Recipe Directions for Chickpea Noodle Soup

  1. Preheat a soup pot over medium-high heat. Sauté the onions and carrots in the oil for about 5 minutes. Add the garlic, mushrooms, and herbs, and sauté for another 3-5 minutes. Deglaze the pot with the mirin. Add the 6 cups of broth and the chickpeas. Cover and bring to a boil.

  2. Once the broth is boiling, break the soba noodles into thirds and throw them in. Lower the heat to medium so that the soup is at a low boil. Cover and cook for 15 minutes, stirring occasionally. Add the water if noodles soak up too much broth.

  3. Add chopped escarole and stir, heating until wilted. Add miso and stir until it?s incorporated. Taste and adjust the salt, and add a little extra miso if you would like a stronger, saltier flavor.
