Adapted from a recipe in the hamlyn vegetarian student cook book. Very easy to make!

Recipe Ingredients for Chickpea and Mushroom Patties

250 grams Mushrooms
3 tbsp Vegetable Oil, Canola
1 large(150 g) Onions
1 tbsp Curry Paste
400 grams Chick Peas
75 grams Bread, White, Commercially Prepared
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Chickpea and Mushroom Patties

  1. Heat the oil in a pan. Roughly chop the onion and fry for 3 minutes, Add the chopped mushrooms and fry for a further 5 minutes or until they are golden.

  2. Pour the mixture into a blender or food processor and add the curry paste, chickpeas and salt and pepper. Blend into a course paste, Make the bread into bread crumbs (toast then bash with a rolling pin!) Add the bread crumbs and blend until mixed.

  3. Make them into patties (I usually make 6!) and grill for 10 minutes.
