these are "junk food" b/c I pan fry them.

Recipe Ingredients for Chickpea Medalions

15 oz chickpeas, or 1 can
1 tablespoons olive oil
1/4 cup vital wheat gluten
1/2 cup oat flour (or chickpea flour)
1/2 cup plain breadcrumbs
1/4 cup vegetable broth
2 tablespoons soy sauce
2 tbsp garlic, minced
1/2 teaspoon lemon zest
1/2 teaspoon dried thyme
1/2 teaspoon coriander
1 teaspoon dried rubbed sage

Recipe Directions for Chickpea Medalions

  1. Heat a skillet on medium heat. Warm some oil on the bottom of the skillet.

  2. Drain chickpeas. Take chickpeas, spices, and all liquid ingredients and place them in a blender. Puree until smooth. Scrap mixture into a bowl and add the dry ingredients. Add a little more flour if mixture seems too runny. Cook like mini pancakes. Makes about 15 medallions.
