Recipe Ingredients for Chickpea Greek Salad

1 serving Chickpeas
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.5 medium (2-1/2" dia) Onions
3 oz Traditional Feta Crumbled
1 cucumber (8-1/4") Cucumber
3 clove Garlic
2 tsp Classic Dijon Mustard
1 tbsp Olive Oil
1 serving Chickpeas
1 serving Chickpeas
1 serving Chickpeas
3 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for Chickpea Greek Salad

  1. drain and rinse chickpeas

  2. seed cucumber

  3. chop all veggies small

  4. mince onion

  5. dice garlic

  6. add oil, lemon juice, mustard and garlic in a bowl, whisk together

  7. pour over veggies/chickpea mixture
