Corn Zucchini & Chickpea Fritters

Recipe Ingredients for Chickpea Fritters

400 g chickpeas
1/2 cup reduced fat milk
3/4 cup self raising flour
1 large zucchini
310 g sweetcorn
1 small onion

Recipe Directions for Chickpea Fritters

  1. Process chickpeas until roughly chopped

  2. Whisk milk & eggs

  3. Place flour in a bowl

  4. Add milk mixture, whisking until smooth

  5. Stir in chickpeas, grated zucchini & corn

  6. Spray large non-stick frying pan with olive oil

  7. Add 1/4 cup mixture to pan & flatten gently. Cook over medium heat til gentlt browned on both sides. Repeat with remaining mixture to make 12 fritters

  8. Serve with salad & chutney
