Recipe Ingredients for Chickpea and Fresh Tomato Toss

19 ounce chickpeas
1 large tomato, chopped
1/2 green onion, thinly sliced
1 1/2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon ground cumin
1/2 teaspoon chili powder

Recipe Directions for Chickpea and Fresh Tomato Toss

  1. Rinse and drain chickpeas.

  2. Place them in a bowl.

  3. Add the tomatoes and onions.

  4. Whisk remaining ingredients together.

  5. Toss with chickpea mixture until coated.

  6. Serve right away or refrigerate for up to 2 days.
