Homemade pasta made with chickpea flour instead of a portion of white flour. No egg is needed because of the protein in the chickpea flour.

Recipe Ingredients for Chickpea Flour Pasta

3/4 cup chickpea flour
1 1/4 cups unbleached all-purpose flour
1/4 teaspoon salt
1/2 cup warm water

Recipe Directions for Chickpea Flour Pasta

  1. Whisk together flours and salt.

  2. Add water to well in the center.

  3. Slowly combine white and flours and mix until just combined.

  4. Turn out on to a floured surface and need until smooth and pliable.

  5. Let rest 20 minutes.

  6. Roll and slice as you please. Cooks in about 2-3 minutes in boiling water.
