Recipe Ingredients for Chickpea and Eggplant Stir Fry

1 cup stop and shop beans, garbanzo
1 teaspoon olive oil
1 cup diced eggplant
1/4 large cucumber
2 cups mixed vegetables
1/2 small onion
1 clove garlic
1/8 teaspoon pepper
1/2 teaspoon seasoned salt

Recipe Directions for Chickpea and Eggplant Stir Fry

  1. heat olive oil, medium high

  2. add chopped onion, eggplant and minced garlic

  3. cook till soft

  4. add seasonings

  5. add mixed vegetables

  6. add beans

  7. cook till heated through

  8. remove from heat, toss with chopped cucumber

  9. serve with toasted pita bread and horseradish.
