These taste like "chicken fried steak" and can be served with a good gravy, I make a mushroom/onion gravy for them and serve them with a veggie and mashed sweet potatoes

Recipe Ingredients for Chickpea Cutlets (vegan)

1 Can Chick Peas
2 oz Olive Oil, Extra Virgin
8 oz Vital Wheat Gluten
1 cup Bread Crumbs
0.5 cup Vegetable Broth
2 oz Soy Sauce
1 Teaspoon Thyme
0.33 tbsp Sage, Ground
1 clove Garlic
3 tsp Spices Ground Black Pepper

Recipe Directions for Chickpea Cutlets (vegan)

put the olive oil and drained chickpeas in a blender but dont puree. Simply blend enuff to make sure there arent any whole chickpeas (consistancy of mashed potatoes) then add the remaining ingredients and knead for about 3 mins or until the dough shows a firm consistancy but is thready if you try to pull it apart. Equally divide the dough into 8 pieces and flatten them into "cutlet" shape. You can fry them in a pan for about 7 mins on each side or spray them with butter spray and bake them in the oven at 400 until lightly browned on the outside but chewy on the inside. when they are done I plate them and put the gravy on and let them cool for a bit before serving
