1/4 cup garbanzo flour for half of vital wheat gluten

Recipe Ingredients for Chickpea Cutlets

1 cup cooked chickpeas
8 tbsp vital wheat gluten
1/4 cup vegetable broth
2 tbsp low sodium soy sauce
2 cloves garlic
1/2 tsp lemon zest
1/2 tsp dried thyme
1/2 tsp paprika
1/4 tsp dried sage

Recipe Directions for Chickpea Cutlets

  1. mash chickpeas

  2. add remaining ingredients

  3. knead for at least 3 minutes

  4. divide into 4 pieces

  5. form into patties

  6. spray with cooking spray

  7. bake at 375 for 20 minutes

  8. turn, bake for 10 more minutes
