Recipe Ingredients for Chickpea Cutlets

1 cup chickpeas
1 tablespoons olive oil
60 grams vital wheat gluten
1/2 cup plain bread crumbs
1/4 cup water
2 tablespoons soy sauce
2 cloves garlic
1/2 teaspoon lemon zest
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/4 teaspoon sage

Recipe Directions for Chickpea Cutlets

  1. Mash chickpeas with oil.

  2. Add remaining ingredients, kneading about 3 minutes until strings of gluten form.

  3. Preheat a cast iron skillet and lightly spray with cooking oil.

  4. Divide the mixture into 4 portions.

  5. Briefly knead each piece, stretching and forming into patties.

  6. Cook 6 to 7 minutes on each side.

  7. May bake if desired.
