Chickpea Curry Recipe

In my head I mixed all my favorite ingredients from different curry recipes I've used. Approximately 6 1-cup servings.

Recipe Ingredients for CHICKPEA CURRY

1 tbsp olive oil
1 onion, diced
1 red pepper, diced
1 tsp cumin
1/2 tsp coriander
1/2 tsp red pepper flakes
1 tbsp curry powder
1 tbsp turmeric
1 tomato, diced
1 apple, diced
1/4 cup water
1/4 cup yogurt
200 g chickpeas, drained

Recipe Directions for CHICKPEA CURRY

  1. Heat the oil in a pan.

  2. Add onions and saute until soft.

  3. Add the spices and mix well.

  4. Add red pepper, tomato, apple, chickpeas, and water. Bring to a boil and let boil until the liquid is mostly dissolved and/or the vegetables are ready.

  5. Add yogurt carefully so it doesn't curdle. Serve and enjoy.
