Recipe Ingredients for Chickpea Curry

1 tablespoon ghee
1 teaspoon whole cumin seeds
1 cup chopped onion
1 large bell pepper, chopped
1 tablespoon curry powder
1 dash cayenne pepper
1 1/2 cup dried chickpeas
4 cups water
1 teaspoon salt
2 teaspoons fresh ginger, grated

Recipe Directions for Chickpea Curry

  1. In a small pressure cooker, melt ghee (or oil), add cumin seeds and sizzle for 10 seconds. Add a 3 inch stick cinnamon if desired.

  2. Add onions and red bell peppers, cook for 3 minutes.

  3. Add chickpeas, water, and cayenne.

  4. Lock the lid in place and bring to high pressure over high heat. Adjust the heat to maintain pressure and cook for about 40 minutes. Turn off heat and allow the pressure to come down naturally, about 15 minutes. Remove the lid.

  5. If the chickpeas are not cooked, replace the lid and simmer over low heat until tender.

  6. Add salt to taste and ginger. Good over rice topped with plain yogurt.
