Sour chickpea curry from Madhur Jaffrey - adapted

Recipe Ingredients for Chickpea curry

2 tbs lemon juice
1 tbs fresh ginger
200 g canned chickpeas
400 g canned tomatoes
1 oz fresh coriander
3 tbs peanut oil
2 onions
1/2 tsp cayenne
1 tsp turmeric
2 tsp cumin
2 tsp coriander
2 tsp garam masala

Recipe Directions for Chickpea curry

  1. Fry chopped onions in oil until start to brown

  2. Add spices and grated ginger and fry for a minute

  3. Add tomatoes/chickpeas (drained)/lemon juice and cook for 20 minutes

  4. Add fresh chopped coriander 5 minutes before end of cooking.

  5. Serve with rice.
