Recipe Ingredients for Chickpea curry

1 tablespoon olive oil
2 cups chopped onion
2 cups sliced carrot
1 tablespoon curry powder
1 teaspoon brown sugar
1 teaspoon grated fresh ginger
2 garlic cloves, minced
1 jalapeno pepper
1 cup cooked chickpeas
1 1/2 cups yam
1 cup diced green bell pepper
1 cup (1-inch) cut green beans
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
14 1/2 ounce canned diced tomatoes, undrained
14 ounce vegetable broth
3 cups fresh baby spinach
1 cup coconut milk
6 lemon wedges

Recipe Directions for Chickpea curry

  1. Cook spices, onion, carrot, oil together.

  2. Put everything in a slow cooker, cook on high at least 6 hrs.

  3. Stir in coconut milk and spinach before serving.
