Very good over brown basmati or jasmine rice.

Recipe Ingredients for chickpea curry

1 medium potatoes, cubed
1 tablespoon canola oil
1/2 red onion, diced
2 cloves minced garlic
3 teaspoon curry powder
2 teaspoon garam masala
1 teaspoon ground ginger
1 teaspoon cumin
1/2 teaspoon salt
1 cup tomato juice
1/2 cup fat free yogurt
2 cups chickpeas
1 carrot, chopped
1/2 green pepper, diced
1/2 cup peas
1 cup whole canned tomatoes

Recipe Directions for chickpea curry

  1. saute potato, onion, garlic, green pepper and carrot in oil.

  2. Add spices after a couple of minutes.

  3. Continue to saute until onions are soft and browned.

  4. Add remaining ingredients, except for yogurt.

  5. Simmer over medium to medium low heat for 1/2 hour to 1 hour.

  6. Right before serving, add yogurt.
