An easy slow-cooker meal. Serve with favourite whole grain: brown rice, quinoa, or naan bread. Original recipe calls for diced chicken thighs.

Recipe Ingredients for Chickpea Curry

480 cup coconut milk
2 canned diced tomatoes
1 sweet potato
1 red pepper
4 cups chick peas
2 tsp cumin
2 tsp ginger
1 tsp coriander
2 tbsp curry

Recipe Directions for Chickpea Curry

  1. Place liquids & tomatoes in crock pot.

  2. Add spices & stir.

  3. Add vegetables and chickpeas and mix together.

  4. Cook 6 hours on medium.

  5. Serve over rice, if desired.
