This was my main course and very good. I don't use Cilantro. in this even though you can.

Recipe Ingredients for Chickpea Curry with Cashews

1 Can Chick Peas
1 serving Cornstarch
1 tbsp Olive Oil
1 cup, chopped Onions
1 tsp Curry Powder
1/4 tsp Sea Salt
1 dash Pepper, Black
0.5 cup, halves and whole Cashew Nuts, Dry Roasted
1 serving Fat Free Yogurt Plain
1 cup Chicken Broth

Recipe Directions for Chickpea Curry with Cashews

  1. Whisk the cornstarch in a small bowl with enoght of the brothe to dissolve. Set aside.

  2. combine the oil, onion,currypowder, salt,and pepper in a large skillet over medium heat. Cover and cook, stirring occasionally, for about 5 minutes or until onion is softened,

  3. Add the remaining broth to pan along with the reserved cornstardh mixture. cook, whisking constantly, until thickened. Add the chickpeas and cashews. Simmer for 5 minutes for the flavors to blend. Stir in Cilantro. Serve with a dollop of the yogurt.
