Recipe Ingredients for Chickpea and Cucumber Salad

2 medium Cucumber, Peeled
28 oz Garbanzo Beans
4 oz Mint
2 medium Carrots
2.5 oz Currants
1.5 tsp Fennel Seed
3 tbsp chopped Shallots
2 fl oz Lemon Juice
1.5 tbsp Olive Oil
1 dash Salt, Table
2 dash Pepper, Black

Recipe Directions for Chickpea and Cucumber Salad

Drain and rinse garbanzo beans, peal and deseed cucumber. Chop into ? pieces, roughly chop mint leaves; peal and grate carrots; and place into medium size bowl; add remaining ingredients to bowl and toss well.
