Makes 8 servings



A cool and refreshing salad with a little bit of protein and some veggies. It's also great with bread or pita if you want to turn it into a more complete meal.

Recipe Ingredients for Chickpea & Cucumber Salad

2 large Cucumbers , peeled and diced
1 large Onion , diced or minced
1.33 Roma Tomatoes , diced (this is actually 4 tomatoes, but calorie count only offers a unit of 3 medium romas to measure by)
4 1/2 cups Garbanzo Beans , cooked (measured after cooking)
4 tbsp. Extra Virgin Olive Oil
4 tbsp. Lemon Juice
1 Salt and Pepper to taste

  1. Prepare ingredients as listed

  3. Note that canned garbanzos work well too. I use 2 large cans (32 oz. each) for the 8-servings version here.
